Day 2– Slow Cooker Barbecued Ribs

Happy National Barbecue Day!

If you know me well, you know I don’t really eat a lot of meat. Maybe it’s because I never liked chewy, stringy bits of meat getting stuck in my teeth. I think the problem was I did not know how to properly cook it! Every bit of these ribs ended up in my stomach. Finger. Licking. Good.

Since today is National Barbecue Day in honor of the Independence Day Holiday, I knew I had to make some BBQ something. Yes, I used a Crock Pot. No, I don’t care if you think that is not barbecuing, cause it is to me. It even has the word barbecue in the name!

All I can say is, tonight’s meal made me a rib-lover! The recipe produced ribs that were FULL of flavor and fall off the bone good. I mean, really….the bones were completely white with no meat left on them.

It was so easy to make, the crock pot does all the work for you. The only drawback to this meal is you need to start it first thing in the morning, so if you leave for work and forget to put it in the crock pot, you’ll have to have it for dinner tomorrow instead. I am NOT counting that against this recipe though, because the flavor and deliciousness won me over. If you have over 4 people in your family that like meat, you may want to double the recipe, because these ribs were so tender and tasty that we could have eaten more if there were more leftover!

Every single one of the family rated this recipe 5 stars. (Well, my Mother in Law said she would rate it 5 stars if it didn’t have so much sauce, but I think she got the ones at the bottom so it’s not the ribs’ fault!) Yummy!

I also tried another new recipe tonight. I made “Best Barbecue Coleslaw” but we came away from the table thinking the name did not suite it. Jacob and Chris gave it 2 stars, Todd and I gave it 3 stars and Sandra–the only one who likes sweet slaw–gave it 4 stars.

It is a very sweet and tangy coleslaw. I am used to sour slaw like you get at KFC, so I was a bit disappointed. I probably won’t be making this again for my family.

Overall, the ribs made it a fantastic meal, worthy of being made again and again in this household. Happy 4th of July everyone!
