- 1 pound of boneless, skinless chicken breast, cubed
- 1 pound of smoked sausage, sliced
- 1/2 C onion, sliced
- 1/2 C celery, diced
- 1/2 C carrots, diced
- 1-2 cloves garlic, minced
- 2 TBSP butter
- 1 pkg 15 bean soup
Soak beans overnight in 2 quarts water.
After soaking, drain water, then add 2 quarts of water.
Bring beans to a boil, reduce heat and simmer uncovered for 2 hours.
Melt butter in a skillet, and saute onion, celery, carrots, garlic and chicken over medium heat for 10 minutes.
Add chicken mixture, sliced sausage, and flavor packet to the beans. Cover and simmer another 30 minutes or until beans are tender. Salt and pepper to taste.
